As you may have gathered from my blogname, I like me some noodles. I hadn’t had any for ages so a while back I whipped up some kale, pea and sesame seed noodles. I used Shirataki noodles to avoid using delicious yet sadly not so healthy wheat ramen noodles. These noodles are made of konjac yam and are very low calorie and low carb, plus they are flavourless so you can do whatever you want with them really!
To flavour my noodles I usually grab whatever catches my eye in our mainly Asian themed spice and sauce collection at home. This time I went for some mushroom soy, plum oyster sauce, chili infused oil, rice vinegar, and swirled in some ground garlic and ginger powder for extra flavour. I cooked the veg with a corn on the cob, and added the noodles to heat for 1 minute at the end. I added the flavouring after straining the veg and noodles. A pinch of salt to the corn and a simple and healthy lumch was done!
